First developed in South Philadelphia, the not-so-humble Philly cheesesteak sandwich, or as it is more commonly called, the “cheesesteak,” is having a moment. Here in Connecticut, it’s long been a standard deli item available at most meat-centric sandwich shops.

Pickled Watermelon Rinds

Rind from 1 pound of watermelon

2 tablespoons salt

1 cup cider vinegar (white wine

vinegar will also work

in a pinch)

1 cup sugar

1 cup water

1 1/2 tablespoons pickling spice
